Think beyond the leftover sandwich. Instead try a Thanksgiving quesadilla! This delicious lunch can be customized with any leftovers you have. Although shredded cheddar or pepperjack work well in quesadillas, try any variety you have on hand. Add in a dollop of mashed potatoes or a drizzle of gravy and really take this dish to the next level. You’ll look forward to your day after Thanksgiving lunch as much as the holiday itself!

Ingredients

  • 4 whole wheat wraps
  • 2 cups turkey breast, chopped or shredded
  • 1/2 cup cranberry sauce
  • 2 cup shredded cheese (whatever you have on hand)
  • 1/4 cup fresh sage, chopped

Brush a large skillet with a coating of olive oil and warm over medium heat.

Place the first wrap in the bottom of the skillet and top with 1/4 cup cheese, 1/2 cup turkey, 1/4 cup cranberry sauce, 1/8 cup sage, another 1/4 cup cheese, and the second wrap. Grill for about 5 minutes on each side, until cheese is melted.

Take off heat and cut into fourths to serve. Repeat with other ingredients to make second quesadilla.
